Sweets and treats are everywhere during the holiday season and we wanted to
put our own festive twist on one! Buckwheat and chocolate is a decadent
combination, so we thought this dark chocolate cranberry cashew bark would be a delicious treat to share: Melt in your mouth chocolate topped with flavorful
cashews, tart cranberries and our crunchy cranberry almond crisps. We love this
chocolate bark because it’s so quick and simple to put together! It’s also perfect to make for gatherings, as a gift for friends, or to keep in the house as a holiday

1 10 oz. bag of semi-sweet chocolate chips
1 tablespoon of coconut oil
2-3 tablespoons dried cranberries
2-3 tablespoons roasted and unsalted cashews
In a ceramic bowl add chocolate chips and coconut oil. Using the microwave, melt the chocolate in intervals of 30 second with mixing in between in chocolate until completely melted, meaning there's no chocolate chunks (just to note my chocolate melted in 2 minutes).
On a lined (using either wax paper or a silicon baking mat) baking sheet add the melted chocolate. Crumble some cranberry almond crackers in pieces and top with dried cranberries and cashew pieces.
Refrigerate bark for 6 hours or overnight. Once chilled, break up the bark into small pieces and serve or store the bark in a glass container in the fridge and save for later.
