Olive tapenade is a spread that dates back hundreds of years, and is popular in the south of France. Our version is classic blend of olives, capers, herbs, anchovy and garlic. This is the perfect spread to pull out as a starter for dinners, or bring to any dinner invite. We love it on top of our Savory Fig & Thyme crisps because they make a delicious salty/sweet flavor contrast!
*Olive tapenade is traditionally made with anchovies which add a deliciously salty flavor, but for a vegan/vegetarian version you can easily omit the anchovies!
Ingredients:
1 Cup pitted kalamata olives
1/2 Cup pittedcastelvetrano olives
1 Tbsp olive oil
1 Small clove garlic
2 Anchovy filets
1 Tsp Capers
2 Tsp lemon juice
Several sprigs of fresh parsley
Recipe Instructions:
1) Measure out all ingredients, and blend in a mortar and pestle until a rough puree forms. Alternatively, you can use a small food processor by pulsing until everything is roughly pureed. Serve with Maine Crisp Savory Fig & Thyme Crisps.
