We’re always playing around with different salad combinations and this one is
becoming a fast favorite on our dining table. It’s both nourishing, delicious and
quite easy to put together. We love that it utilizes some beloved fall favorites like
kale and apples, with other delicious flavors of creamy burrata, chewy dried
apricots and our crunchy blueberry walnut crisps. We find it’s best to crumble up
the crisps quite small, so that you get a little bit of crunch in every bite! This salad
makes for a great main or side dish.
5 oz baby kale
2 - 3 apples, cored and sliced thin
¼ cup dried apricots, chopped
8 oz. burrata cheese, torn into pieces
1 cup crushed Wild Blueberry Walnut Crisps
Balsamic vinaigrette of your choice
Grab a large bowl and lightly toss the kale in balsamic vinaigrette.
On a large plate or platter, lay down a bed of baby kale. Nestle the apple slices into the kale. Add the dried apricots and burrata cheese. Drizzle with your a smidgen of balsamic vinaigrette and top with crushed Wild Blueberry Walnut Crisps to serve.
